So you made the Pan Roasted Sable w:: Sweet Potato Hash, Pomegranate Dressing and you have leftover hash and dressing. What the hell are you going to do with them?

Do yourself a favor, go out and buy some Diver scallops (or giant sea scallops), spinach, and garlic and make this:

Season the scallops with salt and pepper and drizzle with extra virgin olive oil. Sear or grill the scallops in a HOT pan (or grill) for about 3-4 minutes on each side (to rare/medium rare) depending on the thickness of the scallop.

Saute spinach in a hot pan with butter, olive oil, and garlic. Season with salt and pepper, and toss with a little more butter.

Reheat sweet potato hash in microwave.

Mound hash in the center of the plate, top with sauteed spinach, surround with scallops, drizzle with dressing and voila, Grilled Diver Scallops w:: Sweet Potato Hash and Pomegranate Dressing.

Yer blog makes me hungry. But to post a comment I have to do math!?

until i discover better spam protection, it looks like you’re gonna have to do math. it used to be answering a stupid, obvious question like, “what’s the color of an orange?” but that proved to be a deterrent for friends to post comments because they thought I was making fun of them (as in who would be so stupid so as to even deign to answer this dumb ass question).

maybe diver scallops was the “?” on your shopping list.

Hi again… okay I can do the math. It’s good exercise for that little-used section of my brain. By the way, I’ve always wondered how to prepare scallops. Thanks.
